Whether the whisky was distilled in Speyside or Islay, the Lowlands or the Islands, they all have one thing in common – they have been bottled at exactly the right time to capture the unique characteristics of the cask.
The Tomatin 14 Year Old is soft, smooth and sweet, benefiting from its time spent in Tawny Port casks which previously held port for around 50 years. Rich but balanced aromas of red berries, sweet honey and rich toffee develop into aspects of light fruits and nuts on the palate and an abiding finish of smooth fruit salad.
A lightly peated single malt, non-chill filtered. You are initially hit with coconuts and cream with some botanic notes, parsley and coriander. The smoke emerges after a minute, but only drifting past the nose. A mesmeric mix of lime, grapefruit and tangerines with rich almond and aniseed. The palate is initially feather light, followed by a honeyed smoke; toasted almonds. The rich spice of cloves, cinnamon and star anise create an enigmatic elegance. Imagine a café latte with fresh chocolate shavings. The finish is light with a hint of sweet smoke.
For about 12 months, Tullibardine Sovereign has been finished off in Chateau Suduiraut Sauternes Casks, which are 225 litres in size. This creates a wonderful golden whisky with interesting citrus flavour, cereal notes and vanilla. There is a touch of pineapple and orange peel on the finish, which is medium to long.
